I really wanted to like this place. Great staff, cool little spot, but the ribs tasted and felt like they had been reheated a few times. Real dry, yet slimy, and would crumble around the bone. Just overcooked to hell and back, cooled, probably wrapped in plastic wrap, and held in a Sham warmer of some sort. It just felt like steamed, bagged meat. While it did taste like it took a ride in the smoker, the ribs I had felt like that was a few days prior to when I had them. Sides were alright. Looks like they're buying in their hot links from an outside purveyor which is also kind of lame. If you want legit BBQ in LA, check out Moo's Crafg BBQ. They at least have par systems in place. BBQ is meant to sell out the day of. If you can't do that, wheel back how much you're throwing on the smoker until you find that volume of sales versus output of smoker sweet spot. People want fresh meat off the pit, not proteins that have been cooled and reheated no telling how many times throughout the week.
I hope they can right the ship because it does seem like good people are running it. They just need to tighten up operations.
