As a Caribbean native who recently moved to the Washington area from NYC where there was an abundance of Caribbean cuisines I was in search of Caribbean food that was authentic and reminded of home. I had tried a couple places in the Seattle area and they were mediocre at best. Then I was introduced to Calypso Kitchen, owned and operated by Sarah Chan. Not only is she a loving, warm hearted and a perfect example of the true Caribbean spirit, she is also an amazing cook. After having a meal from Calypso Kitchen I was convinced that it was the best and most authentic Caribbean meal that I have ever had (please don't tell my mother). I currently live in the Kirkland area and will travel up to Bellingham where her kitchen is located just to have and enjoy her cooking. If you are in the Bellingham area I would highly recommend you pay her a visit
