Came here on Sunday the 5th of February and I will explain why I mention the date after I write my review. I found this place on Google because I wanted to try a new place near my hometown and found Peacock after a lengthy search. Had never heard of this place so that was a good thing.
I walked in and was impressed at how quiet this place was. I really like quiet ambiences at coffee shops! I also admired the glowing sign at the barista station, it is so unique! Thomas greeted me and I asked him if I could try a shot of his espresso. He proceeded to explain that it is a single-origin bean from Brazil. He gave me a shot and the crema was the first thing I noticed. Very smooth crema. I loved the taste! Very bold yet had the chocolate notes along with caramel. Single-origins are far more bold and I can appreciate that. It tends to hold itself with milk than a blend. I only had it straight for the taste test but will be trying with milk at home.
Now, the date I mentioned is important because the beans were roasted on the 4th of February. Thomas explained to me that I have to wait 5-10 days for the beans to gas out, balancing the C02 levels. I learned something new today! I'm pretty new to espresso knowledge so this was a good detail. I have to wait until Valentine's Day to drink this single-origin, and I bet it will be worth the wait! I will come back and update my review after tasting it out of my Delonghi Magnifica Evo.

Agree with other reviews. Owner is...interesting. But he sure can make a good cup of coffee. Not my favorite in town but he defiantly brings some new/interesting flavors to what he brews/roasts.
